If you have a box of pancake mix sitting on your shelf at home, you are more than prepared to make a variety of breakfast baked goods. You can use that mix to make waffles, to make muffins and, of course, to make all different kinds of pancakes!
While the directions for making pancakes and waffles may be right on the box, it may not have the directions for using the mix to make muffins. Don’t fret, it’s not too difficult!
Follow these easy tips and you will have fresh muffins ready in no time.
What is in Pancake Mix?
Most pancake mixes are made primarily of the same basic ingredients. There is usually flour, baking powder (not to be confused with baking soda), salt and sugar. The quantities of each ingredient may vary slightly depending on the brand you use but essentially, the quantities will remain the same.
You may find mixes with variations of these basic ingredients as well. For example, on pancake mix may have whole wheat flour rather than white, all-purpose flour.
Another mix may have brown sugar rather than white sugar. Others may mix in some additional ingredients like cocoa powder for chocolate pancakes or lemon zest for light, lemony pancakes.
No matter what kind of pancake mix you have on hand, you will be able to utilize it to make muffins in the same manner. The ratio of the ingredients in all pancake mixes across the board are essentially the same and that is what matters!
How to Make Muffins from Pancake Mix
Making muffins from pancake mix is extremely easy. In fact, this may become your go-to way to make muffins! All you will need is a big bowl, a whisk and a measuring cup and you are ready to go.
The recipe is also so easy that you will have it memorized quickly. To make muffins from pancake mix, simply whisk together:
- 2 cups pancake mix
- 2/3 cup milk
- 2 eggs
- ½ cup sugar
Once you have combined the ingredients and the batter is nice and smooth, scoop the mix into a greased muffin tin. You can also choose to line the muffin tin with paper cupcake liners rather than grease the tin. Fill each muffin tin cavity about ¾ of the way full to allow the batter room to expand as it bakes.
Bake the muffins in a preheated 350 degree oven for about 25 minutes or until the muffins spring back to the touch. You can also stick a toothpick in the center of a muffin and, when the toothpick comes out of the muffin cleanly, they are baked! Easy Enough!
Ingredients in Pancake Mix Muffins
When you take a look at the ingredients needed to make muffins with pancake mix, you have a few options.
Of course, you should keep the pancake mix the same, however, you can make adjustments and use substitutions for the other things you are mixing in. Just another way to customize your muffins to be perfect for your taste!
Milk- You can use any kind of milk that you’d like in order to make your muffins. While whole milk is standard, you can replace it using skim milk, almond milk, coconut milk or even oat milk.
If you want your muffins to be super rich and dense, replace the milk with heavy cream or half and half. If you want them to be lower in calories, use skim milk instead.
Keep the quantity the same as pancake muffins rely on sticking to the correct ratios!
Eggs- Eggs are a necessity in order to make the pancake muffins hold together rather than crumble apart after being baked. However, you can replace the eggs in the recipe with flaxseed eggs which also work well (here are a few more egg-free options).
To make flax eggs, combine one teaspoon of ground flaxseeds with one tablespoon of water. Stir together and then let the mix sit for about 5 minutes to thicken. This makes one “egg” that you can use in any recipe.
When making this recipe for pancake mix muffins, use 2 teaspoons ground flaxseeds and 2 tablespoons of water to replace the 2 eggs in the recipe.
Sugar- You can use any kind of sweetener you’d like in this muffin recipe. If you want a low carb muffin, use a sweetener like erythritol or monk fruit. If you want a muffin with a little more flavor, replace the sugar with brown sugar for a richer taste. If you want your muffins to be a little sweeter, increase the sugar by ¼ cup.
Muffins are traditionally a little sweeter than pancakes so, when you make muffins using pancake mix, you will need to add some kind of sweetener to get that perfect muffin taste.
Just with any kind of muffin mix, you can add various ingredients to pancake mix muffins in order to make the exact type of muffin you would like.
Fruit, nuts and spices can be added to this recipe very easily, without having to change anything in the standard recipe. About one cup of fruit (fresh, frozen or dried) or one cup of nuts is the perfect amount to add to this size recipe.
If you choose to add some spices to the recipe, aim for about 1 teaspoon total ground spices. For example, one teaspoon of cinnamon would be perfect or, try ¼ teaspoon nutmeg, ¼ teaspoon ground cloves and ½ teaspoon ground nutmeg for a delicious spiced muffin. Add some fruit, nuts and spices all together to create a whole new kind of muffin!
As you can see, making muffins with pancake mix is very easy. Not only is it simple to do, just mixing a few ingredients together and then baking, but you can also adjust the recipe in a number of ways, making the muffins customized to you.

I made these today, I added additional oil to keep them moist and more cake like, I also put Chocolate protein powder instead of the sugar. The protein made it extra thick so I had to add an an extra half cup of milk to get the battery the right consistency, they turned out great. Even in the toaster oven. Husband and son both approved.

This is the ONLY pancake mix Muffin Recipe that has ever worked for me. Simple and it works, can't ask for more. NOTE to those with convection ovens, I notice my muffins come out dry with the convection function, but with the regular baking function they come out perfect. Thanks for sharing this recipe!

I wasnt sure if i was supposed to make the normal pancake mix first and then add the milk sugar and eggs so mine had 3/4 cup of water to the mix!😩 Am I totally screwed? They are in the oven right now they smell amazing tho.

I made these tonight. In a greased muffin pan. I made 1/2 frozen bluberries and the other half cranberries. Cooked at 350 for 25 minutes. They were absolutely perfect! Thank you for the awesome recipe
