Who doesn’t love homemade cheesecake??? Well, it gets even more delicious during strawberry season!
You’ll love this recipe so much, you may be disappointed next time you get a slice from a restaurant.
If you’re like me and feel like using a store bought crust, then start off with melting about 1/2 cup of white chocolate and letting it cool slightly while you mix the other ingredients.
Mix 12 oz of softened cream cheese in a large mixing bowl, when smooth add 2 cups of powdered sugar and continue mixing.
Next mix in 2 cups of whipped cream, followed by the melted white chocolate and a dash of salt. Make sure the white chocolate hasn’t started hardening before putting it in with the other ingredients.
If it has, warm it a little more to melt it again.
Spread the mixture into your crust and smooth it out.
Wash and slice up a batch of strawberries and lay them on top of the filling. Stack up as many as you want.
Melt a little more white chocolate to drizzle on top of the strawberries.
Chill in the fridge for at least an hour, then enjoy!
Tip: Use a sharp knife when cutting the cheesecake
