White Chocolate Chip Blondies

Recently, it was my sister-in-law’s birthday, and I asked her what she wanted me to make. I was up for anything!

She asked me to make blondies! Yum. Great choice.

I was pretty sure she was a white chocolate fan, so I decided I needed to up my game and throw some white chocolate in there.

My kids decided on some artistic flair and picked out sprinkles to throw on top. Fabulous!

I used this recipe from The Salty Marshmallow for an easy blondie recipe, plus the additions of white chocolate chips and sprinkles!

The ingredients for the white chocolate chip blondies are: plant butter, brown sugar, eggs, vanilla extract, all-purpose flour, baking powder, and salt.

First, I preheated the oven to 350°, and I prepped a baking pan by greasing it with olive oil. I used an 8×8 pan instead of a 9×9, which is what the original recipe called for.

Then I measured out the brown sugar using a scale. I tend to prefer weighing, since the weights are a lot more consistent!

After melting the butter in the microwave, I added it to the brown sugar and stirred it all up. Make sure you get all of the brown sugar off the bottom and mixed.

The eggs were next! I added two and thoroughly whisked the mix together.

Now for the dry ingredients. I weighed the flour in the bowl on the scale, and then I added the baking powder and salt.

Mixed it all up, and we were good to go!

Oh wait! Add the white chocolate chips! I didn’t want to add too much, but I hoped it was enough.

Then I poured it all in the pan and smoothed everything out. Ready to go in the oven!

I put it in the oven and set the timer for 30 minutes. I did pull it out at around 15 (though I wanted to do it sooner – kids!), and I added some sprinkles. After checking it with a toothpick and it being very wet still, I put it back in.

Since I put it in a slightly smaller pan, I ended up going over a few minutes. Those few extra minutes did the trick, and when I used another toothpick to check, it was gooey but not totally wet. Perfect.

Delicious. So, so yummy. They were a hit with my sister-in-law too!

White Chocolate Chip Blondies

Prep Time: 15 minutes
Cook Time: 35 minutes
Total Time: 50 minutes

Delicious blonde brownies with a touch of white chocolate decadence and a dab of artistic sprinkle flair!

Ingredients

  • 2 c brown sugar, packed
  • 1 c unsalted butter, melted
  • 2 eggs, large and at room temperature
  • 2 tsp vanilla extract
  • 1 ¾ c all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • ~ ½ - ¾ c white chocolate chips
  • Handful of sprinkles

Instructions

  1. Preheat oven to 350°F. Prep a 9x9 pan with a light coat of oil.
  2. Using a large bowl, mix brown sugar and melted butter.
  3. Add eggs and mix until smooth.
  4. Add flour, salt, and baking powder and mix well. Be sure to scrape down sides and bottom.
  5. Add white chocolate chips. Mix gently.
  6. Pour into prepared pan and smooth out the top of the batter.
  7. Put into oven to preheated oven for 30-35 minutes. After about 10 or so minutes, add a thin layer of sprinkles on top.
  8. Check for doneness with a toothpick poked into center of blondies. If it comes out fairly clean (it will finish baking out of the oven), remove the pan from the oven.
  9. Let cool before cutting into 16 pieces.
  10. Enjoy!

Notes

- You can use cooking spray if you are using a glass or metal pan that is not non-stick.

- If using an 8x8 pan, you may have to go a few minutes longer. It also will result in thicker blondies.

- Add as many white chocolate chips as you'd like! Feel free to try other add-ins as well, like semi-sweet chocolate chips or nuts!

- If you need it to be dairy-free, simply make sure the butter and white chocolate chips are non-dairy, and you'll be set!
