I am new to baking cakes and want to know when to use non-stick and not non-stick pans. I am planning to bake sponge cakes, genoise cakes, and chiffon cakes. I read an article that to make chiffon cakes, I should be using a not non-stick pan so that the batter can cling to the wall and rise. So I am thinking to buy Wilton's both Aluminum Cake Pan and Tube Pan. Would this be a good choice? Please advise. Thanks!
